Basically no loot is spawning, only in lootables, crates etc.

The loot tables are set low on purpose.
You can edit the Loot Multiplier Chance in each of the location files yourself or just wait for Ereshkigal's AKI Configurator mod to be updated which is the better option imo. -

I found it go to:
\Aki_Data\Server\database
Open: "globals.json" with your text editor
then "Control+F" to find "GlobalLootChanceModifier"
Ive got mine set to 50.0 which is way over the top but loot is spawning all over the place.
Also if you find "Stamina" (with the quotes) then change "Capacity" and "OxygenCapacity" to 999 you get stupid amounts of Stamina.
