Update: Issue solved by moving the SPT-AKI folder to a different location.
Previous location: Desktop (C:\Users\<my name>\Desktop)
New location: C:\
I suspect Windows did not play nice with it being in C:\Users for some reason.

I'm at a loss on what to do. There are no client logs because there is no logs folder generated.
