Game getting stuck at 00:00

When trying to start a raid, the game timer reaches 0, but never allows me in-game.

probably one of your mods, can you replicate this with no mods please and provide fresh logs when you do.

I noticed 2 things:

1. As noted in the log(s), one of these mods seem to remove the "EscapeFromTarkov_BE.exe, Uninstall.exe, and UnityCrashHandler.exe" after launching, though the game creates the issue stated as the subject of this post.

2. I've backed up said executables and have removed all mods/plugins, but now, the launcher is stuck on "connecting."

Hmm, that is weird, i think something may be messed up with your install in that case, (although if you have modded items in your profile and you remove the mod, this can cause issues too.)
So what I suggest, is pop your mods back on (as this let you launch at least) make a backup of your profile. Then go through your inventory, discarding any modded items. Remove mods and try again.

If no joy you may have to try on a fresh install.
